Okonomiyaki (お好み焼き) is a Japanese savoury pancake, which can be made using a variety of different ingredients. I’ve tried many variations of Okonomiyaki, in Japan and in the UK. At the end of this post you will find a recipe of how to make Okonomiyaki.

Okonomiyaki is mainly associated with Kansai and Hiroshima areas, as I first tried it on a visit to Osaka. It is now widely available across Japan and the World, well in most places as I found it in London at a restaurant called Abeno Too.

Dohton Bori is a franchise in Japan which offers Okonomiyaki and other food. I went with some friends and we made Okonomiyaki.

The name comes from the meaning of “okono” which is means “what you like” and “yaki” which means to “grill”.

When I first saw Okonomiyaki being made/ordered it in Osaka, I had no idea what was going on.

Ingredients

As mentioned anything can be used to make it, and it’s usually cooked on a hot plate in front of you or you can make it at home using a pan.

The batter is similar to pancake batter, and then ingredients can be added to this such as octopus, bacon/pork, squid, shrimp, noodles etc. To make Okonomiyaki at home you can buy at some places the batter which is pre-maid.

Once everything is mixed, the ingredients are placed on the hot plate/in a pan.

As you can see a spatula type object is usually included to flip the mixture and cook it through. It’s pretty fun to do as a group or at home.

Once cooked it should look something like the above. The last one I cooked at home.

The Okonomiyaki is finished off usually with the added sauce which is otafuku/okonomiyaki (tastes a bit like Worcestershire Sauce it say’s on Wikipedia), mayonnaise, seaweed flakes and bonito flakes.

Okonomiyaki Recipe

Ingredients:
1 x Okonomiyaki Batter
2 Eggs
200ml Water
Bacon/Pork/Prawn
Cabbage
Beni Shoga (Japanese Red Ginger)

Instructions:

1) Mix the batter with 2 eggs and add water till the mixture is almost a liquid.
2) Add the other ingredients such as Cabbage, Beni Shoga and Meats to the mixture.
3) Heat a pan pour the ingredients/mixture into the pan.
4) Using a spatula flip over the mixture to make sure both sides are cooked
5) Once the mixture has cooked in the pan, serve onto a plate.
6) Add the Okonomiyaki sauce and Mayonnaise, and eat.

    That’s pretty rad.  I had a couple chances to check out the Lock-Up in Shinjuku, but I missed the boat both times!!  Woe~  I really hope to check it out someday.  I don’t know how I feel about taking something called a ‘suicide pill,’ lol, even if it is obviously fake.
